Sunday Night Dinner- Beef Stew

Wow!  Has it really been a year and 1/2 since my last blog post?  I guess one of my goals for 2015 will be to post more often.  There is so much to write and catch up on but I will save all of that info for another post.  Tonight I made an oldie but goodie for dinner- Beef Stew!  It is my mom’s recipe, was a favorite growing up, and is now a favorite of my husband’s.  This recipe is delicious and easy to make.

Ingredients

1 1/2 to 2 pounds cubed lean beef stew meat

1 can of peas

1 cup of baby carrots (about 1/2 a bag)

onion powder

salt and pepper

1 can of tomato soup (in addition to 1/2 can water)

2 large russet potatoes

3-5 bay leaves

Directions

Put all ingredients in a crockpot and turn on low for about 8 hours.  Remove the bay leaves before serving.
