Spinach-Tortellini Soup

After eating out the past few nights, I decided it was time for a home-cooked meal.  Found this recipe on Pinterest several months ago and it is a keeper!  Hubby and I both love eating this for dinner.  It is a good way to sneak in some veggies too.  Lots of spinach and tomatoes.

Ingredients

1 (14 1/2 oz) can chicken broth

4 cups water

2 extra-large vegetable bouillon cubes

1 (10 oz) package frozen chopped spinach, unthawed

2 (14 1/2 oz) cans stewed/diced tomatoes, undrained  **I use fire-roasted diced tomatoes w/garlic**

2 packages (9 oz) refrigerated cheese-filled tortellini

shredded Parmesan cheese

Directions

Bring first 3 ingredients to a boil over medium-high heat.  Add spinach and tomatoes and return to a boil.  Stir in tortellini.  Cook for about 5 minutes.  Add shredded Parmesan cheese to each serving.  I also like to sprinkle fresh pepper on my soup serving.

I like to serve my soup with fresh bread.  Tonight we had a loaf of sour dough infused with garlic pieces.  So delicious!  Hope you enjoy the soup as much as we do!
